After connecting a cable with analog output signal to the 3,5 mm analog input jack and choosing analog input in Hifiberry OS as source I expect that it should be possible to open a stream for example with iTunes. No success. What is the stream adress? http://ip-adress:port ???

There is no stream address. If you activate analogue input, it is routed to the output. HiFiBerryOS doesn't act as a streaming server.
Which output? The two RCA-jacks? That would have no sense: an analog input signal routed to an analog output. A simple cable does the same. I thought that an DAC + ADC device is capable to convert an analog input signal into a digital output signal. Or what else ist meant with „routed to the output“? And what‘s the purpose of the analog input choice in HifiBerryOS?

Yes, the RCA jacks. It makes perfect sense for a lot of people to switch between analog input and Pi audio - that's what HiFiBerryOS does.
The DAC+ ADC can be used as an input device on Linux, but HiFiBerryOS was never designed as a streaming server. It's simply not the right software for your use case.

Unfortunately it doesn´t work: when trying to open a stream by typing
"ip-adress:8000/hifiberry.mp3" or when trying to access the streaming server "ip-adress:8000"
I always get the message
404 - The file you requested could not be found.
