It would be good to have an option where when you go to http://hifiberry.local/ you can choose what landing page you arrive to. For example, I'd like to land directly to Albums page.
Also, there in the music sources, the Home tab is not available. What should be there?
Instead of going to hifiberry.local, you can use hifiberry.local/#music as a bookmark. This will bring you directly to the music screen. However, it's not possible to link to a specific function within a module.
... any way to set the "home screen" / "landing page" on the display of a connected 7" screen? Like, when the system boots up, the connected display does not show hifiberry.local but hifiberry.local/#music ?

While you could edit the system startup file, this will be overwritten by an update. There is no official way to change this.
