is this possible to connect it all to one Raspi Pi 4?
I made a mistake thinking the CSI Cable would be enough, but you need to connect 4 cables to the GPIO for the touchscreen to work.
Also as a bonus, is it possible to get rotary knob working too?
You should NOT connect the I2C pins to display, this is handled by the CSI cable. Connecting these will mess up the normal I2C communication.
There are lots of projects to connect rotary controllers. Just make sure, you don't use any GPIO that's already in use:
