I have downloaded the appropriate HifiberryOS image and flashed it onto SD card. Inserted it into my Raspberry Pi3B. Plugged in my ethernet cable and powered it up. Waited 5 minutes. Nothing happened. Repeat, still nothing happened.
What have I done wrong?
BTW I am coming from RuneAudio which is working fine, headless.
Any help is greatly appreciated.

How are you checking to see if something happened? Do you see any any activity from the Ethernet port on the RPi?
You'll need to have a way to discover the IP address of the RPi after it boots. It may not be the same IP address that your router assigned to it when it was running RuneAudio. You could login to your router to look for it or try the free "Fing" mobile app (assuming your WLAN and LAN use the same network).
You could also try connecting it to a TV via an HDMI cable to see if there are any helpful messages on the console.
Once you know the IP address, you'll enter that into a web browser on your computer to complete configuration of HiFiBerryOS

Hmm...what did use to flash the microSD card with HiFiBerryOS? Oh, and where did you get the image?

You'll need to unzip this file. When you do, you should find an image file like this:
hifiberryos-20200908-pi3.img
That's the file that you want to flash to your microSD card using Etcher (or similar)

I downloaded the image as per the URL you stated, unzipped it as requires to get the file name as per you stated.
I flashed it to my microSD using Etcher as suggested in the HifiBerry tutorial.
I even used SD Card Formatter as request to format my microSD card using both Quick format and Overwrite format options,
Only problem is unable to tick off CHS format size adjustment cos it was greyed off.
As you can see, I did everything by the book, but still no bootup on HiFiBerry OS.
On bootup I watched for the blinking light at the ethernet port, but nothing. I also typed http://hifiberry.local, also nothing after over 5 minutes.
BTW I could not find "Fing" mobile app in App Store, although I can login to my router to look for it (not Fing).
Any LEDs blinking on the Pi?
Yes…the RPi sounds kind-of dead. That, or the power supply. There should be some LEDs coming on somewhere…
Finally some good news!
I re-do the whole process on old Acer Netbook running on Windows7. The processing chucked along at a reduce speed but finally it worked.
Inserted the microSD into the RPI, plugger in the ethenet cable and powered it up. Lights started to blink and Fing showed it as one of the devices connected to my network.
Typed in http://hifiberry.local/ and it got me into the HiFiBerryOS "home" page.
Now how to got it to play the music form thumb drive?
I've not spent a lot of time with HiFiBerryOS, but I think it's more of a streaming endpoint than it is a media server. You can stream to it from your laptop over UPnP or DLNA. You could install BubbleUPnP on an Android phone or tablet and add your HiFiBerryOS as a renderer. Roon is, arguably, the nicest way to use your new endpoint. Apple Airplay should work also. Bluetooth is even possible (although sound is not quite as nice). Lots of options for playing to it over your network.

HiFiBerryOS can also play music from a local USB stick - even though we recommend to have it on a NAS. Just plug in your USB stick and check the "music" under "sources".
With a large collection, initial scan can take quite long.

Not sure what you mean by "control", but for managing a music library, including local files and streaming subscriptions, Roon is the best solution,.
You'll need a computer on the same network that can run Roon Server. You can then use the free Roon Remote app to control the server and direct music to play to your Raspberry Pi. Sounds more complicated than it is, but it's quite powerful. You can have a virtually limitless number of remote Controls and Output devices once you get your server (Core) setup.
You can get a fraction of this functionality with the BubbleUpnP app (again, Android only). There are similar apps for iOS, but I'm not familiar with them.
