i'd like to make use of HifiBerryOS as an SpotifyConnect and Airplay Receiver for my Nubert nuPro XS-7500. The RasPi would be connected to the Soundboard via USB. Is it possible to output the sound via USB in HifiBerryOS / select an external USB-Soundcard as DAC?

No, this is not possible. HiFiBerryOS only supports HiFiBerry sound cards.
There is probably a TOSLink or analog input of your soundboard. You could use the Digi+ or DAC+ output and connect it to an input of your device.
Actually, HiFiBerryOS is based on linux and supports a lot of sound cards.
SSH into your Hifiberry and get a list of your installed sound cards:
$ aplay -l
card 0: sndrpihifiberry [snd_rpi_hifiberry_dac], device 0: HifiBerry DAC HiFi pcm5102a-hifi-0 [HifiBerry DAC HiFi pcm5102a-hifi-0]

I would like to use 'USB Advanced Audio Device', so I have to change one file
nano /opt/hifiberry/bin/reconfigure-players
Find this block of code:

and change 'hifiberry' to the name of the soundcard you would like to use. In my case 'USB' was fine, since it was the only device that had 'USB' in its name.
While you can fiddle around with the system to put in some hacks, this probably will break a lot of things and it will definitely break on every update.
@Hifiberry It's tempting to think that that reconfigure-players-script which overwrites your soundcard settings on every boot was intentionally installed there to positively influence your hardware sales.
The OP bought a rasperry pi, not an iPhone. I think they can handle a little tinkering on the command line. The "hack" I proposed here will most likely not break anything. You change a config file, that's what you do on Linux. Please stop spreading FUD.
People, protect the environment, and use the hardware you already have. Don't buy a new DAC because Hifiberry told you it was dangerous to "fiddle around with the system to put in some hacks".
