Finding DAC+ in pactl

I've moved my Hifiberry DAC+ RTC over to a Raspberry Pi 4B running a reasonably fresh installation of Raspberry Pi OS Bookworm.  The file /boot/firmware/config.txt includes the following:

[all]
dtoverlay=i2c-rtc,ds1307 
dtoverlay=hifiberry-dac

The raspi-config utility can find the DAC+ under System Options -> Audio -> snd_rpi_hifiberry_dac

However, the pactl utility cannot find the DAC+ only the headphones.  I would like to use the headphones for some audio and the DAC+ for other audio.  How can I get pactl to be aware of the DAC+ first?

$ pactl list short sinks
0    alsa_output.platform-bcm2835_audio.analog-stereo    module-alsa-card.c    s16le 2ch 44100Hz    SUSPENDED

Again, the idea would be to use both the headphone jack and the DAC+ for different outputs and have separate volume control for both.
